Beet Blueberry Ginger Smoothie Bowl

This beet blueberry ginger smoothie bowl is a pretty and healthy way to start the day on Valentine's Day. It's a tasty and healthy way to start the day because it's full of antioxidants, vitamins, and fiber. It's also simple to make and great for sharing with someone you care about.

Ingredients:

  • 1 small cooked beet, peeled and diced

  • 1/2 cup frozen blueberries

  • 1/2 inch fresh ginger, peeled and grated

  • 1/2 ripe avocado

  • 1/2 cup unsweetened almond milk

  • 1 tablespoon chia seeds

  • 1 tablespoon unsweetened shredded coconut

  • 1 teaspoon vanilla extract

  • Optional toppings: fresh blueberries, sliced strawberries, shredded coconut

Instructions:

Place the cooked beet, frozen blueberries, grated ginger, avocado, almond milk, chia seeds, shredded coconut, and vanilla extract in a blender


Blend until smooth and creamy, adding more almond milk if necessary to reach your desired consistency


Pour the smoothie into a bowl


Top with fresh blueberries, sliced strawberries, and shredded coconut, if desired


Serve immediately and enjoy this vibrant and delicious Valentine's breakfast!
